The House

Ebbio is a two-storey restored Tuscan farmhouse.

Its thick stone walls and terracotta tiles will keep you cool in the summer and cozy in the winter, while the many windows invite in the scent of lavender and freshly mown grass.

The house features a traditional fireplace and a wood-fired pizza oven, blending rustic charm with thoughtful comfort.

Outdoor spaces

Wisteria-covered pergola for outdoor dining and seated activities.

South-facing patio for sunset celebrations, fire ceremonies and special events.

Outdoor lounge (adjacent to the shala) for relaxation and informal outdoor activities.

Organic garden, lavender fields, and olive grove for foraging, walks, and picnics.

Indoor spaces

Activity room / yoga shala (100 m² / 1,070 sq ft) for movement, equipped with all necessary props (mats, straps, blankets, pillows) for up to 22 participants, with adjoining bathroom and Bluetooth speakers.

Workshop space (across from the shala) for workshops or as a backup indoor dining area during rainy days.

Massage room for treatments, convertible into a single bedroom.

Common area (80 m² / 860 sq ft) for lounge, dining, and relaxation, featuring a fireplace, two large dining tables, sofa, and armchairs.

Rooms

(sleep up to 21 people):

3 triple rooms – each with a private bathroom; can be set up as one queen + one single bed, or as three single beds.

5 double rooms – three with private bathrooms, two share a bathroom; can be set up as one queen bed or as two single beds.

1 massage room – convertible into a single bedroom, uses the shala bathroom.

Sustainability

We believe in responsible travel, and strive to demonstrate the model for sustainable living.
Our guests can participate in work on the farm, get their hands dirty and bring the lessons home to live a more mindful life.

We are committed to nine criteria for measuring our impact as an organisation: energy, water, food, waste, carbon footprint, education, health, employment and happiness.

We are constantly working to improve our systems with renewable energies, heating via biomass, waste recycling, gray and black water treatment and reuse, compost and permaculture. We work closely with the local community, farmers and artisans alike, to raise awareness and create a positive impact through workshops.

Energy

In the winter we use biomass stoves for heating, using the waste from our agricultural work on our seven acres of land. In the summer we use solar panels to heat our water.

Food

We eat organic, local, seasonal, traditional foods. We produce our own olive oil, jam and eggs, while our wine is bought at the local cooperative where we sell our grapes. We grow all our fruit and vegetables in our garden. We follow the rhythms of nature and try to be as self sufficient as possible.

Water

We have reverse osmosis filters installed in the kitchen for drinking water and we collect rainwater to flush our toilets and for agricultural purposes. Tuscany suffers from heavy droughts in the summer, so we ask our guests to be mindful of their water use during their visit.
