Ebbio is the perfect retreat and holiday location in the hearth of Tuscany. Ebbio is a restored 13th century farm beautifully transformed in a tranquil spot for retreats and holidays. Nestled inside an evergreen forest, it sits on an extinct volcano that was sacred to the Etruscans, and overlooks the medieval walled town of Monteriggioni.

The country ways of old Italy are preserved here, where we dedicate ourselves to the organic cultivation of our olive trees, fruit, vegetables and herbs, which we then use in preparing our home-made vegetarian meals. The unique décor of our eight bedrooms builds on this traditional heritage, with earthly colors and windows onto the rolling Tuscan hills.

Within easy reach of nearby cities, including Siena (10km) and Florence (45km), and a short walk from Monteriggioni, Ebbio is seated in the heart of the region of Tuscany, renowned for its fertile landscapes and artistic heritage.

Flavours, smells, sounds and sights combine with history to create a holiday experience that is like stepping into another world.

We welcome groups of up to 20 people for visits of all kinds—yoga and meditation retreats, weddings and family getaways, or corporate events. We’re happy to design custom packages to tailor our offering to your unique requirements.

Ebbio Santuary

Our story

A 13th-century farmhouse in the heart of Tuscany, surrounded by seventeen acres of rustic countryside, was found in a state of total abandonment and ruin in 1989. Ebbio became the lifetime dream of a mother and then a daughter.

In her mid-forties, after several trips to India, a change of name, diet, clothing, and lifestyle, Nirdosh decided to flee the city forever with her 5-year-old daughter, Sibilla. Her dream was to create a nest, a shell, where people from all walks of life could share their passions.

She devoted herself to the study of nutrition science, macrobiotics, vegetarian diet, and alternative healing methods. She explored natural plant remedies, meditation, and many other practices she encountered along her path. Her goal was to live in harmony with nature, respect the seasons, live sustainably, and have a sense of community by sharing her dream with people to whom it resonated.

It is appealing to many today, but it wasn’t then.

Sibilla grew up on the farm and followed her mother in all adventures until it was time to pursue her own path of studies and a fashion career abroad. In 2017, after many years away, she came back and discovered that her mother’s lifetime dream was somehow hers as well.

Nature, plants, animals, memories, adventures, challenges—the soul of the place—made it so that she actively became part of Ebbio, adding her sense of aesthetics while working hard to keep the essence of Ebbio’s principles strong. Keeping her mother’s dream alive while making the experience even better.

Ebbio has evolved from a slightly disorganized commune to one of the first locations of its kind, hosting yoga, creative and writing retreats, meditation workshops, art seminars and residencies, team-building experiences, and tailored events, all with a common inclination for holistic and kind living.

We’re a self-sustainable farm and family whose unique flavors derive from the land and the diverse richness of two women’s lives, tastes, and experiences. We produce and forage all the fruits and vegetables we serve. Each is picked just hours before it reaches Ebbio’s bountiful dining table. Nirdosh created the recipes, mixing tradition with innovation, creativity, and modern simplicity—she has a gift. Sibilla curates all table details, making sure all garden preciousness and kitchen magic are rightfully presented to fulfill most senses.

We care to share our passions by leading farm tours and hosting foraging and cooking workshops. You can learn to recognize and discover the simple joy of finding wild edible plants, sprouts, mushrooms, asparagus, or flowers. You can learn about food preservation and transformation: jamming, jarring, sun-drying, and salt-preserving. You can learn how to make tinctures, scented oils, unguents, and even natural cosmetics. You can learn how to listen to the wind caressing olive tree leaves.

There is something ancient and human about this connection with the natural environment that is too precious to lose. In our noisy, busy world, true luxury lies in being able to unplug and reconnect—with nature, with animals, with others, and with yourself.
